This Japanese Soup Base or mentsuyu is an all-purpose condiment typically used as a dipping sauce for tempura and soba noodles. Made from bonito ichiban dashi, it is highly concentrated and has a savory flavor with a hint of the ocean. It can also be used as a soup base for udon, somen, hiyamugi soup.
