Cherry Blossom Tea or sakurayu is an exquisite herbal tea made of salt-pickled cherry blossoms. When covered with hot water, the preserved blossoms delicately open their feathery petals and make a rosy-colored brew that is slightly salty and floral. These pickled blossoms can also be used in making a number of desserts and pastries.
